Debbie's Cleansing Celery Soup is great for helping cleanse the gallbladder and reducing blood pressure. Celery is rich in vitamins C and K, as well as folate, potassium and antioxidants. This Cleansing Celery Soup is cheap, warming and ready in half an hour, what more can you ask for? We recommend adding some soy cream for extra indulgence.
You will need:
2tbls olive oil (can be replaced with 5 tbls of water)
3 onions chopped
2 heads of celery sliced thinly (keep celery leaves for decoration)
8 cloves garlic chopped
4 large white potatoes chopped
2 ltrs veg stock
Sesame seeds
Salt and pepper
Heat a large pot over medium heat. Once hot, add oil (or water), onions and celery. Season with a bit of salt and pepper and stir.
Sauté for 4-5 minutes or until translucent. Then add the garlic stir for a further minute.
Add the potatoes and veg stock to the pot. Then bring to the boil. Once boiling simmer for 25 mins.
While the soup is cooking toast the sesame seeds and set aside.
Once boiled purée the soup with a stick blender.
Server in a bowl sprinkle with sesame seeds and celery leaves.
Then enjoy!
Store leftovers covered in the refrigerator. Reheat on the hob and add more vegetable broth or water to rehydrate as needed.
