This is the healthiest way to eat in the most delicious ways! A Meditteranean diet is renowned to be one of the healthiest on earth, based around fresh, local produce and delicious flavours.
This workshop is all about vegan food for everyone!! Learning new techniques and plant-based hacks to create your own home-cooked happiness.
Vegan food is quickly going mainstream, with so many new options appearing in the shops but can we eat quick, healthy, vegan dishes at home? How can we make the most out of fresh, seasonal vegetables and recreate the tantalising dishes we see on Instagram at home. Lee’s gonna show you how!
Lee’s workshops are high energy and fun, filled with knowledge and tips to revitalise the way you approach vegan cooking. Expect an edible rainbow of food, packed with bold flavours and nutrients.

A balanced vegan diet is the healthiest way to eat and we all need a little inspiration sometimes, whether you’re just starting your vegan journey, or you’re a vegan virtuoso! Lee’s food is seasonal and uses local produce, with an emphasis on simple techniques that make the most out of humble produce. Lee will be talking a little about vegan nutrition and a lot about the way vegan food can change our lives and the world!
Our menu is inspired by spring, the returning of the sunshine to our lives so what better way to celebrate than with Mediterranean flavours, light and spicy, vibrant and colourful. Lee has travelled extensively around the Mediterranean and has recently returned from a cooking trip around Palestine and Israel filled with new ideas.

- Turkish Vegetable Traybake with Vegan Za’atar Labneh
- Rainbow Pressed Salad with Avocado Flatbreads
- Cacao and Walnut Brownies with Cherry, Rose and Pomegranate Sorbet

About Lee and the Beach House Kitchen
Lee is the author of ‘Peace & Parsnips’ vegan cookbook author and TV presenter, who has been championing healthy vegan cooking for years, changing perceptions and inspiring taste buds. Travelling all over the UK and world; a chef by trade, a world traveller by choice and a food blogger for fun (beachhousekitchen.com). Lee currently hosts a variety of retreats, holidays and events throughout the year and can’t wait to be back in Glasgow, where he went to school and university.
