About The Event

Looking for fresh inspiration?  New vegan recipes that everyone will enjoy?  Add some spice to the way you cook! 

This is the healthiest way to eat in the most delicious ways!  A Meditteranean diet is renowned to be one of the healthiest on earth, based around fresh, local produce and delicious flavours.   

This workshop is all about vegan food for everyone!!  Learning new techniques and plant-based hacks to create your own home-cooked happiness. 

Vegan food is quickly going mainstream, with so many new options appearing in the shops but can we eat quick, healthy, vegan dishes at home?  How can we make the most out of fresh, seasonal vegetables and recreate the tantalising dishes we see on Instagram at home.  Lee’s gonna show you how!

Lee’s workshops are high energy and fun, filled with knowledge and tips to revitalise the way you approach vegan cooking.  Expect an edible rainbow of food, packed with bold flavours and nutrients.

A balanced vegan diet is the healthiest way to eat and we all need a little inspiration sometimes, whether you’re just starting your vegan journey, or you’re a vegan virtuoso!  Lee’s food is seasonal and uses local produce, with an emphasis on simple techniques that make the most out of humble produce.  Lee will be talking a little about vegan nutrition and a lot about the way vegan food can change our lives and the world!

Our menu is inspired by spring, the returning of the sunshine to our lives so what better way to celebrate than with Mediterranean flavours, light and spicy, vibrant and colourful.  Lee has travelled extensively around the Mediterranean and has recently returned from a cooking trip around Palestine and Israel filled with new ideas.

  • Cooking demo of all the dishes mentioned below. 
  • Two-course meal after the demo to try all the lovely dishes. 
  • Q+A after dinner and book signing, where signed copies of Peace and Parsnips will be for sale. 
  • Recipes to take away after the workshop to try at home. 

The Menu 

  • Tofu, Tempeh and ‘Shroom Shish Kebabs with Walnut Dukkah and Supergreen Zhoug
  • Turkish Vegetable Traybake with Vegan Za’atar Labneh 
  • Rainbow Pressed Salad with Avocado Flatbreads
  • Cacao and Walnut Brownies with Cherry, Rose and Pomegranate Sorbet

All vegan and sugar-free (GF option available for the flatbreads)

Learn how to make:

The ultimate vegan kebab, how to press and marinate tofu and tempeh, plus the very best mushrooms and flavour combinations for kebabs.  

Make the most of your roast - tips on making the very best out of roasted vegetables

Make your own avocado flatbreads, rich flavour and great colour!

Learn to toast and grind your own spice mix and make delightful Dukkah, an excellent and versatile condiment.   

Pressed salads, a very healthy and flavorful way of preparing salads. 

Quick, creamy and nutritious tahini-based sauce

Fermented vegan cream cheese?  Much easier than you can imagine! 

Deliciously healthy and very simple brownies

Quick, revitalising, no sugar fruit sorbet

About Lee and the Beach House Kitchen

Lee is the author of ‘Peace & Parsnips’ vegan cookbook author and TV presenter, who has been championing healthy vegan cooking for years, changing perceptions and inspiring taste buds. Travelling all over the UK and world; a chef by trade, a world traveller by choice and a food blogger for fun (  Lee currently hosts a variety of retreats, holidays and events throughout the year and can’t wait to be back in Glasgow, where he went to school and university.
